Try this healthy mixed berry granola bar recipe
- Heat your oven to 350 degrees. Line your oven tray with aluminium foil bottom and sides and all the foil slightly with a paper towel.
- Chop 1/2 cup almonds and add them to the baking tray with your Happy Berries Fit & Flex granola.
- Mix and spread them evenly in the tray and bake for 5 minutes. Stir and bake for another 5 minutes until they are lightly roasted and transfer to a large bowl.
- Take a quarter cup of butter and 1/3 cup of honey in a saucepan. Add a quarter cup of brown sugar, 1 teaspoon vanilla extract and some salt. Cook on medium flame and stir occasionally till the sugar completely dissolves.
- Pour the mixture in the bowl of almonds and granola. Mix well and let it cool for 5 minutes.
- Add a small cup of chocolate chips and stir to mix well (Optional, You can replace this with cut pistachios as well).
- Transfer it all to the foiled oven tray and press the mixture with your hands to make it even.
- Cover the tray with aluminum foil and refrigerate for 2 hours. After 2 hours remove the tray and gently remove the granola block from the tray. Cut into as many pieces as you like and enjoy.
